If one has always been accustomed to planning meals around a rolled rib roast of beef, or a leg of spring lamb, or a fine shad, or a roasting chicken, it is difficult to adapt one's ideas to less imposing main dishes.
A main dish is the most substantial dish of the meal, and the others should harmonize with it if the meal is to be a balanced one. There was a time was when many families ate bacon or ham with eggs at breakfast, a cold platter of meat at noon, and meat again at dinner. Where will you find anyone today who really enjoys meat three times a day?
